Fix MATLAB Toolbox Packaging Constructor Arguments#10

The `matlab.addons.toolbox.ToolboxOptions` constructor requires the toolbox identifier (GUID) as the second positional argument when initializing from a folder. Previous attempts passed it as a name-value pair or omitted it, causing build failures. This commit updates the call to pass the GUID correctly and also updates the Author Name and Email to 'Van Hooser lab' and 'vanhoosr@brandeis.edu' respectively.

.github/workflows/release.ymlto correctly instantiatematlab.addons.toolbox.ToolboxOptions. The GUID is now passed as the second positional argument, followed by the remaining properties as Name-Value pairs.
